Saint-Saens is best known for his zoological fantasy Carnival Of The Animals. The best version is by Previn on the Philips Duo set. To get the suite with Saint-Saens Organ Symphony No. 3, Dutoit and Hurford are very good, and the classic Ormandy / Biggs recording is fine for its age, and at a great price. Munch and the Boston SO have a classic 'Living Stereo' CD with the Organ Symphony along with Debussy's La Mer, and one of the dwindling Munch recordings still in print.
It seems that some great Piano Concerto sets are out of print, most notably Michael Plasson with Philippe Entremont on Odyssey/Sony. However, the Previn / Collard and Dutoit / Roge sets are great 2 CD collections. If you want to sample some of the other Saint-Saen concertos, the CBS Masterworks disc is not bad, but the Philips Duo set is a better buy.
